Not Yo’ Mama’s Mousse

Sorry, didn’t mean to drop off there. I was sick, sick, SICK this weekend and am just now getting over it. So, I have a recipe for you. This is my Mom’s mousse recipe, which is why it’s not your Mom’s recipe. She didn’t write it or anything. She probably got it off a can of Cream of Coconut but it’s the mousse she makes and I love it. It’s an ADULT mousse. Something I like to enjoy after The Squid goes to bed and I need a bit of time to decompress. Enjoy!

Coco Mocha Mousse

Makes 8 to 10 servings

1 envelope unflavored gelatin

1/4 cup cold water

1 (15 ounce) can Coco Lopez Cream of Coconut

1/4 cup strong coffee or coffee -flavored liqueur

3 tablespoons unsweetened cocoa

2 cups (1 pint) whipping cream, whipped

In a  small saucepan, sprinkle gelatin over water: let stand 1 minute. Over low heat, stir until gelatin dissolves. In medium bowl combine cream of coconut, coffee (liqueur), and cocoa; stir in gelatin mixture. Chill 10 minutes. Fold in whipped cream; spoon into individual serving dishes. Chill 1 hour or until set. Garnish as desired. Refrigerate leftovers.

*The last time I made this I used a chocolate praline liqueur (usually I use Kahlua) and it was divine!

  1. So sorry you were sick this weekend–it’s never fun to be sick and especially on a weekend. Your mom’s mousse sounds delicious! I just happen to have pint of whipping cream around so the mousse might be on the menu this weekend. Thanks for sharing!

  2. What is cream of coconut? Is it the same thing at coconut milk?
