Ugh…double Ugh…

I have been around I promise. Squid has been sick since Sunday so things have been pretty quiet. He seemed almost back to his normal self today which meant of course something had to happen, right? Bloody nose while I was cooking supper. He’s so used to these that he laid on the floor with a tissue in one hand on his nose and an ice pack in the other while I finished cooking. The good news is this was the first full meal he has eaten since Friday. Be back soon with a knitting post and picture!

Not Yo’ Mama’s Mousse

Sorry, didn’t mean to drop off there. I was sick, sick, SICK this weekend and am just now getting over it. So, I have a recipe for you. This is my Mom’s mousse recipe, which is why it’s not your Mom’s recipe. She didn’t write it or anything. She probably got it off a can of Cream of Coconut but it’s the mousse she makes and I love it. It’s an ADULT mousse. Something I like to enjoy after The Squid goes to bed and I need a bit of time to decompress. Enjoy!

Coco Mocha Mousse

Makes 8 to 10 servings

1 envelope unflavored gelatin

1/4 cup cold water

1 (15 ounce) can Coco Lopez Cream of Coconut

1/4 cup strong coffee or coffee -flavored liqueur

3 tablespoons unsweetened cocoa

2 cups (1 pint) whipping cream, whipped

In a  small saucepan, sprinkle gelatin over water: let stand 1 minute. Over low heat, stir until gelatin dissolves. In medium bowl combine cream of coconut, coffee (liqueur), and cocoa; stir in gelatin mixture. Chill 10 minutes. Fold in whipped cream; spoon into individual serving dishes. Chill 1 hour or until set. Garnish as desired. Refrigerate leftovers.

*The last time I made this I used a chocolate praline liqueur (usually I use Kahlua) and it was divine!

Summer of Re-reading

Did you know that I love to read? Do you know what I love more than reading? Rereading! (Don’t ask me which I like better, reading or knitting. Depending on my mood will affect my answer.) There are times in my life when I don’t want any surprises. I want to know what is going to happen and when it’s going to happen. Be it happy or sad, I need to know the future. With my divorce, juggling expenses of my son’s therapies, and just plain trying to figure out what’s going on in my life I needed to have some stability. Needed to have a safe place. So, I went through my bookshelf and started re-reading. In no particular order, here is my summer of re-reading list:

The Hobbit and The Lord of the Rings Trilogy by JRR Tolkien (for the umpteenth time)

Lightning by Dean Koontz (the 4th reading?)

The Movie Set by June Flaum Singer (the 2nd read)

Garden Spells by Sarah Addison Allen (I’ve read this 3 times now)

The Forgotten Garden by Kate Morton (2nd read)

Too Much Temptation and Never Too Much by Lori Foster (everybody needs a little sexy summer read! 2nd time read)

The Thirteenth Tale by Diane Setterfield (2nd read)

The Tenth Gift by Jane Johnson (2nd read)

The Hunger Games Trilogy by Suzanne Collins (3rd read)

The Harry Potter Series by JK Rowling (3rd read)

My favorite book to reread is The Count of Monte Cristo by Alexandre Dumas. Generally though I find that to be a winter book to reread. I don’t know why either, don’t ask.  I am on the 4th book of the Harry Potter series and have decided that when I finish the series it’s time to pick up something new.  So I grabbed my handy, dandy book of wish list books:

And I head off to my local Half Price Books.  Besides my little wish book, I take with me 4 boxes of books that I’m ready to let go of. Two hours later I walk out with this:

 Two bags full of new (to me) books to read. Wonder how many will make it to the re-read list for later? Do you have a favorite re-read?

Never Ending

This is my current work in progress. I started this a long, long, LONG time ago!! Can’t tell by the length of it, huh? It sat in a sack hidden away. So, I pulled it back out and have been knitting on it here and there. It is sea silk which is just DIVINE! Maybe the never ending scarf will actually see an ending someday?

Remember Me?

Hi! I was once part of PurlingPs. (If anyone remembers that blog!) Well, I decided to start blogging again. Unfortunately GoodGirlPurl is much too busy (too busy to even knit!) and won’t be joining me. I’m not going to be blogging under PurlingPirate. Decided to just be me. See what happens. Maybe post a recipe or two. Keep you updated on The Squid’s therapies. Gripe about the weather that is killing my plants. Just stuff and things. Of course, there will be knitting. Lots of knitting. I’m gonna sit down and do a photo shoot of my UFOs and maybe that will incite me to finish some! Ha! Probably just scare me into casting on something else! So, stay tuned for more…
